When I first said I was going to make my daughter acorn squash boats for breakfast, my husband did an Exorcist head spin with the bold statement of, "Hell no." He says his people are offended by squash. He's got some veggie issues. 😂
What about all of the vitamin C, provitamin A, B vitamins, potassium, magnesium, iron, and manganese and all of the other nutrients packed in there!? This cute little squash comes from a family of vegetables known for their disease-fighting and immunity boosting properties. Top that with being a complex carbohydrate, and anti-inflammatory.... It is also very low-FODMAP ... so why not.
