Flourless Protein Pumpkin Muffins
Flourless Pumpkin Muffins. A bit spongey, but still a work in progress. Maybe round 3 will be better next week. Let me know if you try them how you like them.Ingredients:
Organic Pure Pumpkin, 1.5 Cup
WheySmart Shake, 3 level scoop
Garden of Life Extra Virgin Coconut Oil , 1 tbsp
Pastured Egg Whites, 3 tbsp
Pure Baking Soda, 2 tsp
Stevia, 1.5 g = level teaspoon
Pumpkin Pie Spice, 1.5 Tsp
Pure Vanilla, 1.5 tbsp
Himilayan Salt, 1/4 teaspoon
When I make them for my daughter I will sometimes add enjoy life chocolate chips or raisins
Directions:
1. Add all ingredients to bowl and stir
2. Line 8 - 12 muffin cups with paper
3. Bake @ 375 for 18 - 30 minutes depending on your location and oven. (Check around 18 minutes to see if they need to cook longer)
