So my daughter loves Mac n Cheese, but I haven't been happy with any of the ones we have tried. We've done them all, except for the nut based items due to allergies. However, who knew, what we were missing was red lentils.
Red lentil pasta, like chickpea pasta, cooks up in about 7 - 8 minutes, but the key is that after you drain it you have to rinse it. The boxes may say not to, but I have personal experience that if you want your pasta to act like pasta, treat it as such.
We put salt and olive oil into the water before bringing it to a boil. Then then once drained we rinse the starches off with cold water for a minute or two in the colander.
The one we really love is the Modern Table Vegan & Gluten-free Mac n Cheese. At Whole Foods it runs $4/box, and on Amazon you can get it for $25/6 Boxes. It takes a box and a half for our family because my husband eats like a teenage boy when it comes to mac n cheese. I also like to add a little taco Tuesday to it and add in our guacamole spice. That is amazing. If you like it spicier, use the pico spice.
