Do you love chocolate chia pudding? I love a quick and simple healthier dessert for breakfast. Some people love nice cream, but I love chia pudding and you can add a dollop of  whatever you desire on top depending on the day.

Caramel Macchiato Pudding for breakfast!!! OMG!!

For The Chia Pudding:
3 cups unsweetened non-diary milk
10 large medjool dates, pitted
2/3 cup raw cashews (or tigernuts with allergies)
1 tablespoon Organic instant coffee (regular or decaf)
2 teaspoons vanilla
1/2 teaspoon salt
1/2 cup chia seeds or sub in a little of the Chia Jam Mix to spice it up!

For The Caramel Sauce (Optional, But Encouraged in Canada there is the exclusive Caramel Sauce Mix available through mid-August! 😍 this three-ingredient recipe is sugar and sodium-conscious, and can even be made vegan! )

1/4 cup Dolcedi organic apple sweetener (or sub in maple syrup)
1/4 cup nut or seed butter
2 tablespoons coconut oil
Pinch Icelandic salt

Add the top six pudding ingredients into a high speed blender. Blend until smooth. Add in the chia seeds and blend on low until they are blended nicely into the liquid. Pour into your mason jars (or your glass containers if you joined with your kit) and pop in the fridge until it those chia seeds plump up and your pudding thickens. This takes about 4 hours so is perfect for making Sunday morning, and finishing up on Sunday night.

Once the pudding has thickened, add all the caramel sauce ingredients into a small saucepan. Heat over medium, stirring constantly, until the sauce comes together, about 5 minutes. Pour your own desired amount of the caramel over each of the chia puddings and return to the fridge to allow your caramel to set on the pudding, about 30 minutes to 1 hour. Enjoy!

Ingredients
MAKES: 4 SERVINGS

4 medium Banana (ripe, cut into chunks) or soft pears for allergies
1/2 cup vanilla, unsweetened non-dairy milk alternative
1 tbsp Chocolate Truffle Sweet Dip Mix
1 1/2 tsp Chia Jam Mix
Cocoa Crunch Whole Food Topper (for garnish)

Directions:

Place top four ingredients in your Rectangular Steamer. Microwave, with lid on, for 2 minutes.
Remove from microwave and mash with a fork.
Divide mixture between serving bowls or cups and garnish generously with whole food sprinkle.

You could also go an entirely different direction with the Summer Berry Mix or add Mango Curry spiced nuts... just so many directions with that base of the mashed bananas.
