I saw this interesting blog post about quinoa crispies and had to see what I could do. I can eat the I Heart Keenwah organic hot cereal, but regular quinoa seems to be a nightmare for my gut.

Lately I have been having the Vigilant Eats Superfood Cereal, since I can prep and go to summer camp. It has no soy, no dairy, no additives, no preservatives and no refined sugar. It is also organic, gluten free, vegan, non GMO and kosher.

Today it seemed like it was missing something. I do add berries, but decided "what if?"... So in steps an awfully weird recipe.

I mixed my Keenwah cereal with just 1 serving of cereal and 2/3 of the hot water. Mixed in some Summer Berry mix, powdered greens and chocolate pudding mix separately in 1/3 of the cereal. Baked on 350° for 10 minutes and flipped. Then I went ahead and let it cook to crispy.

I used my coffee grinder to blend them up and now I have a tasty protein topping for a few days to add to my cereal with my wild blueberries.

This is really what the epic life is about. Finding out what works for you and going for it!

You can also create a full on breakfast crumble.

Ingredients
MAKES: 4 SERVINGS
4 C (1 L) frozen or fresh mixed berries (blueberries, raspberries or blackberries)
1 Tbsp (15 ml) Summer Berry Sweet Dip Mix
1 Tbsp (15 ml) lemon juice
1 C (250 ml) Vigilant Eats Superfood Cereal or gluten-free (and sprouted if you can find them) oats
1 tsp (5 ml) Apple Pie Spice (Free when hosting an August / September Online Wellness Event)
1 scoop Vanilla Optimum Vegan Protein Blend
1/4 C (60 ml) mixed nuts, chopped, optional
1/4 C (60 ml) unsalted butter or coconut oil, melted
1 C (250 ml) Non-dairy greek style yogurt or a sweetened vegan cheese

Directions:
1. In a bowl, toss the berries with sweet dip and lemon juice. Place berries mix on the bottom of a Multipurpose Steamer.
Microwave uncovered, on high, approximately 4 minutes, until the berries become tender and the sauce begins to thicken.
In another bowl, stir together the superfood cereal, protein blend, spice, butter and nuts if desired.
Spoon the mixture on top of the berries and microwave for another 4 minutes.
Serve with Non-dairy greek yogurt or a sweetened vegan cheese. You can add additional spices or dip mix into the vegan cheese to make it so tasty.
