Summer Love Paleo Vegeo Recipe Roundup Vegan Whole30

There's something about the impending swim suit season that gets people thinking about changing their diets. This is the time when my book sales increase, which is why I just updated Nourished In 30 to the Second Edition.

One thing I have to admit is that finding recipes has been my special gift, and I love sharing my gift for those looking to do a Vegan Whole30. Now is the best time to do a quick clean up month before since the 4th of July is around the corner. We have almost 70 people that I will be adding to our private group today, and so I thought I would share some of my favorite recipes as the group gets going on the June challenge.

Here's a recent Whole30ish Plan for me:

M1: I generally now do Bulletproof matcha, golden latte or skinny coffee for breakfast. It helps me if I can automate my meals with my busy schedule, and although it may be considered SWYPO, I don't care. I figure that I have found my nutritional truth, and that's what I think this sort of diet is all about. Since hitting a low on my estrogen, I have had to do more of an intermittent fasting and lower carb and higher fats diet paleo vegan diet.  Can you do a Vegan Bulletproof, or Vegan Keto? Of course you can. Don't let anyone stop you if that's where you feel it in your heart.

M2: 8-12 oz water (or hemp or flax milk if I feel the need for something more) + 1 scoop protein powder or VeganEggs + spinach, rainbow chard or kale (in either omelet or scramble form) + 1/2 Avocado for the husband and a 1 tbsp Thrive oil for me

M3: Large Chopped Salad = Dino Kale + Cucumber + Celery + Olives + Hemp Seeds (some days) + Homemade Lemon Dressing or Salsa (+ small sweet potato on training days)

M4: Dinner

Monday : King Oyster "scallops" in coconut cream with sautéed swiss chard.
Tuesday : "Chicken" nuggets with garlic green beans
Wednesday : Asian cabbage stir-fry
Thursday : Mushroom " beef " stroganoff (made with coconut sour cream) with riced cauliflower
Friday : Spicy Artichoke Salad with cauliflower pizza and a movie! I was excited for the Trader Joe's Cauliflower Pizza Crust to roll out to my local stores, however it didn't turn out to be something I really wanted. They pulled it off the shelves and then it came back. It is made with corn. Sad. There's the Caulipower and the Cali'flour which both have eggs and cheese, unless you get the Cali'flour Plant Based crust made with almond flour and flax. Of course you can totally make your own or buy any of the gf crusts on the market already. 

Dessert if needed: Organic Berries + protein powder in water if it's right before bed, or a big cup of Lemon Balm tea.

Feel free to drop the edamame .. this is just an idea of how to ramp up a salad to bring some of the flavor your have been missing into your meal. Soy is on the W30 shopping list for those that maybe haven't seen it before. This Thai Kale salad from alifeoflittlepleasures may become a favorite mason jar salad for your Whole30 program. 


Why have I never thought to make this Artichoke Antipasto salad from kalynskitchen.comI love all of these, and in fact used to put them together on pizza all the time.
